Are some manufacturers better than others for commonly used semiconductors?
I.e. is On Semi better than Fairchild or vice-versa, etc.. or is it just as long as you get parts from a reliable source (so they are genuine) that one is the same as the other as long as it has the same specs?

ON Semi, Fairchild, TI, National, NXP, They are all fine....If you want to be safe, just don't buy any of the Chinese knockoffs, though most of the time they work.
Yes, but unfortunately there is no global rule
It depends on the specific part and most importantly where it's used in your application. for example using 3 terminal regulators in an analog hi-gain preamp, noise on some manufacturers process may just meet spec and not have as much margin or as tight of grouping as others. the same part used in a DAC circuit may not be so fussy for noise. If you design by analysis for specs you s/b ok for most all, but if you are depending on what you built before being exactly the same, but are now using new vendors all bets are off.

All semi manufacturers are good at what they can do. Otherwise they would not be in business. It's only when they try to make a semi they are not familiar with that things go wrong.
You can view re-manufacturing of fakes in the same light. If they are good at it they will keep making money.
