I'm searching for a good diy DAC project, but so far I couldn't find any.
As DAC chip I would prefer one still in production, like a PCM1794 or similar.
Any suggestion?

Is there a reason to prefer a chip that's still in production? There are lots of good chips out there and lots of good projects based on them.

Why do you want to use a DAC chip and not a partly discrete DAC and more importantly, what do you regard as good and what as bad when it comes to DACs?
