I haven't used it in a long time, but ProTools gets used for a lot of editing, recording and mixing. Not free or cheap, but it's pretty high quality, and AFAIK, does not depend on Avid hardware anymore.
Another vote for Goldwave. I've used it for over 18 years and still like it. As Marcel mentions, it easy to learn and use. It has some very useful functions that other software does not.I rather like GoldWave, which is a commercial product with free trial period.
Audcity is of course free, cross platform and pretty good. I go back and forth between it and Goldwave.
