I have 2 pcs. Ulveco Ring Core transformers and I want to use them for an Amplifier Project.
It has 2 secondary tappings of 27,5V and 650VA.
I also have a lot of MJ15003 and MJ15023 transistors.
Is there any known project I could use?

That the rigt voltage for a 60-65W amp. The VA is pretty hefty - more than you need for stereo. If you are in to home theater you could build a stereo + center channel amp. If you careful to use only 8-ohm speakers that should handle all five channels.
As for specific amp designs, there is projecr 3A ay sound.au.com. Or if you are a bit more ambitious, look at the books by G.Randy Slone, the amplifier book and the projects book (try amazon.com)

You can check out some designs here. Though it's designed for 40-0-40, it will work with 27.5-0-27.5 with some minor adjustments.
This particular design may interest you. It's a quasi-complementary output, which means you can use all MJ15003.
