😕 I'm after getting a sub and amp setup. usin 2 x 10" subs. if my 2 subs are rated @ 380W (max 1000W) do i want to be using 1 amp rated @ 760W or 1 @ 2000W?

It's not really that simple 🙂 The power handling also depends on how the speaker performs once inside your specific box.
If the speakers really are decent ones then an amp of between 700W and 1500W will do fine. Also bear in mind that most car amps are massively over rated in terms of wattage, and that doubling power will only give you 3dB more SPL which is not that much of an increase.

well, 3dB + means doubling the volume
But I agree that most amplifiers are overrated.
