How big is the resistor?
In al that post you didn't say a word about the recomended resistor value by manufacturer and the maximum voltage compliance at the DAC output. DAC's have a "current" output only if the resistance/voltage on that output is zero. They don't have ideal curent sources, therefore any deviation from that virtual zero will translate in increased distortions.
The only I/V converter device that satisfies that demand is the one shown in data sheets (or similar one done with discrete components).
Also, using just one of the outputs instead of the differential mode raises the distortion even more and loweres the signal/noise value.
