Given the stability of british mains, am I better off going for a toroidally wound
one? Farnell sell some too. Might see if I can get a suitable mu-metal surround
for it too, just for perfection's sake.

The shield is near pointless given the toroids lower field in the first place.
Two 115V primaries in series give you a 230v primary, I assume TIWYM.

Sort of ideal, filters shunt the hash to earth whereas a lossy transformer just loses it in the gap so to speak. Also bear in mind have you actually had any problems with clicks and noises previously anyway?

It's the quality of manufacture that mostly determines the noise from a transformer.
The main exception that I am aware of is non symmetrical AC mains' waveform through EI or Toroid. The toroid does benefit from the addition of a DC blocking Network in the primary feed.
Right, I've gone for a line filter and toroidal transformer combination. And a switch, because unplugging was getting annoying. And a multimeter because this one's a pile of crap 🙂.
Disaster! The new multimeter (that came along with a shiny new 15-0-15 transformer) has revealed that the old transformer is in fact 12-0-12.
