About Dolby digital processors...

Sorry, I'm new to this.
Is there a manufacturer who have a Dolby or Dolby/DTS processor that simply take the digital output from a DVD player and produces the analog decoded 5.1 output channels?
Not the regular Dolby processor with all the controls, but only the converters's functions.
Please don't kick me!

If I would consider a new DVD player that includes the required converted 5.1 analog outputs (DD and some...DTS) there is a choice for good units.
Pioneer Elite DV-50AVi, DV47Ai and DV-45A.
Marantz DV8400,DV6400.
There must be other products available for sure...

Changing my actual DVD player for a newer and much better one could be a good move, specially if it includes the decoded outputs. The rest...designing a 6 channels controller with great performance could be a simple formality. My block diagramm is ready!

I'm not sure of your budget, but I saw a Denon for around $1300 (DVD-3910) and another one for around $700 (DVD-2910) that did have the analog outputs, DVD-Video, DVD-A and SACD from one player. Also, it had both the DVI and HDMI outputs for HDTV's. Sounded pretty 'future proof.' In addition, the DVD-2900 appears to be going on clearance with similar features for around $700. There are also cheaper ones (Samsung: $200) which handle the multiple formats. I personally have no idea if these are good players or not, but they have a huge number of features. I'm going to wait until they come down in price, as they are out of my budget. Do some research on what others think of the players and see if that fits your bill.

Your question sounds like you want an analogue surround sound processor. Hopefully your reference to "Dolby" is just lack of understanding about what these things do. That said and assuming you want to play music or a movie from your DVD in analogue, then the Lexicon brand versions will work very well.
The Lexicon CP-3 is an early version with THX certification on the front of the case. It can be used as a pre-amp for all your devices, altho this model has limited input connections on the back end of the box.
They can be had for around $200 even on e-bay. Be cautious about buying this model unless it has BOTH remote controls. One remote is for programming and the second one is for daily use. This model cannot be accessed from the front panel to set it up for your room modes etc. And Lexicon no longer sells or repairs the remotes for these "Legacy" models. The CP-1 model is not quite up to what you probably want in a processor and sells for the same kind of money.
Still have my old original CP-3 and it works after all this time, so it is reliable. Got a copy of the user's manual and such somewhere in the file cabinet.

If your sources are all digital (5.1 or PCM), the SH-AC500 works fine on its own: it has a volume control. Just add amplifiers. 2-channel (PCM) sources like CDs can be listened to in Dolby Surround or stereo.

The only real drawback is that speaker management isn't supported for DTS (you can't select Large/small speakers, or tell it there's no center channel speaker for DTS).
 
I'm suspecting that you are after something slightly different to what I'm about to suggest, (ie decoder only, with line level outputs.... but this unit from outlaw audio might be ok http://www.outlawaudio.com/products/950.html

I've been looking for a deocder/preamp too, Rotel have one, which is significantly more expensive, Krell, and Arcam have ones too, but these are statospherically expensive.

I'm guessing you don't really want the preamp part though, and you are planning on making your own preamps???
