I was searching for lcd panels and found a 7" panel with a resolution of 1440x234.

Unless you're planning on a small screen (or have very bad eyesight
) I'd steer clear. It is another example of manufacturers exagerating the specifications. Divide 1440 by 3x to find the true resolution, 480x234 - Not good enough for a decent sized screen and DVDs imho.

It will work, just don't expect the same picture quality as a Lilliput or a 15". My first projector was a 480X234 7" on a 3M OHP. Here's a shot from it at 100" diagonal fed with a JVC dvd player. Not great but not terrible either, better resolution than a Sony Playstation lcd.
