I've seen Rp data for this tube of 840 ohms and 2000 ohms. Which is correct or is neither?

plate resistance is more plate voltage related, just like mu, and transconductance is cathode current related, the higher the cathode current the greater the gm gets...
a look at the tube datasheets for triodes will show this...

you will soon learn that increasing the B+ supply increased the cathode currents and so increased the gains...
what then is your limitation? the plate dissipation ratings, make sure you do not approach it, small signals use a fraction of the plate dissipation ratings when considering the tube operating point.....
