Where can I get a single 26-28 gauge shielded wire (similar to hook up wire) to be used for input from the RCA connector to the main board?
Can any of the CAT 5 wire be used?, any shielded and solid core?,

Cat 5 is not usually shielded.
Why do you want a particular gauge? Thin shielded wire should be available from most electronics stockists.

any recommended from web site?, here Audtek Electronics 205E6Y Cat 5e Shielded CMR Solid 350 MHz Blue 500 ft. am somewhat confused about whether individual wire (8x) is shielded?
I am in the UK so not the best person to advise about US stockists. Cat 5 is unlikely to shield individual pairs. Why are you looking at Cat 5? Why not look for simple shielded cable? Some people use thin coax.
You can buy the 28Ga wire of your choice and the braided shielding as separate items, thread the 28Ga into the shield, tighten the shield by gently pulling on both ends, and construct your own. Both are widely available.
You can also check the usual cable manufacturer's catalogs (Belden, Alpha, Carol. etc) to see if a particular part # fits your needs, and then Google search the part # for a consumer-level vendor.
You could also check the well known eBay vendor "John's Wire Shop" for some Mil-Spec communications wire that is a single shielded type in the gauge you prefer. He buys surplus spools from Boeing, manufacturers of civilian, military and aerospace craft in Washington State, USA.
There are many other sources. If you are finding difficulty sourcing your preferred cable, perhaps start by searching for some tips on using a search engine. I know that sounds condescending, but it's not meant to be ... search is a skill.
Not a particularly complex or difficult skill, but a skill none the less. If you find you can't find what you seek, then you need to hone that skill. Just like literacy was a critical skill in the 20th Century, search is a critical skill in the 21st Century. Learn it, or expect to fall behind.

Your description also practically describes Coax wire should you choose to use that; there are probably thousands of examples to choose from.
