I want to use a true 3 channel 2.1 amp for a 3 way active WTMW speaker, 2 x 50W for the tweeter and midrange, and 100 watts for the 2 woofers in parallel. However, when I look on eBay, they're all stereo amps with the .1 derived from the 2 channels. Are there any that are a true 3 channel amp?

The Red Sanwu TPA3116 boards have pads for conversion to PBTL mode. So, get two, use one as 2x50w, and 1 as 1x100w.
Or wait... given that you plan to run the two woofers in parallel, feed the same signal to both inputs, and run each woofer off its own 50w channel. If you go this route, the blue Sanwu TPA3118 60w mono boards are also an option, as are any two channel/stereo TPA3116 board

I'm trying to do this in one board if possible. I'm thinking of putting the board right inside the speaker, and the space inside is extremely limited. I also want to avoid using 2 PSU's, which is part of the reason to undertake this project to clean up wire clutter.
You can use one PSU for any number of amps, just make sure it can output enough power. Most mono (PBTL) boards are really tiny.
