I recently sourced a transformer from a Sherwood RX-4109 that is rated at 120v 60hz 2.5a, and I'm wondering if this would be suitable for my LM3886 build. It's a simple stereo setup with 1 PSB and 2 amp boards. Thanks in advance guys.

2.5Aac & 120Vac gives ~300VA.
That would indicate a much bigger amplifier than 60W+60W into 8ohms.
The 3886 has a +-42Vdc maximum supply voltage.
Your transformer must not give out more than 28Vac -0- 28Vac when open circuit secondary and the mains voltage is at your nominal supply voltage.
If it is >28Vac you are likely to blow up your 3886 chips.
