I'm looking for a high quality 1kohm volume pot (log taper, dual or quad). All the good pots are high-impedance (10k and up). Has anyone seen such a device?

Somebodys having a noise “issue” 🙂
Try Spectrol 180 Series,
Farnell P/N 307-1133 or 307-1250 1K Double Gang Log.
After major QC issues with Log Pots, the tracking between Gangs can be very poor due to the Log Taper, I now use LIN pots and an extra resistor to emulate a Logarithmic like taper – I find its Ok for most applications.

Making a log potmeter with a lin potmeter + adding a resistor does not work very well due to the non linear resistance on the taper. The larger the current, the worser the effect.
Once I tried wirewound potmeters, which seems to work well exept that they are very hard to get in stereo. you need to make a mechanical connection between them to have dual or even quad configuration.
