So, just thinking about a bit of a different valve project. Has anyone ever come across a valve schematic for a theramin?
A simple Google search (for "vacuum tube theremin") will yield quite a few results...

The Theremin World schematic is probably on the simpler side of the spectrum. By nature, you're going to have some tuned oscillators - so coils and caps are to be expected. You've basically got two oscillators - each with 2 tubes + a power supply. IIRC, Tube theremins tended to exhibit some drifting...

And, one thing I forgot - no matter how complicated the build - actually playing one (and getting anything resembling music) is more difficult (at least for most people).

I built one many years ago when I was a teenager from a Popular Electronics magazine article. (April 1955) It worked well and I had a lot of fun with it. But there is one part that is extremely hard to find. And that's a Miller 695 capacity operated relay coil. But you can make one yourself. (If the link doesn't work, just google "capacity operated relay coil" and it's the first one)
