I'd vote for Steve Howe's work on Yessongs, not a great recording but not as bad as some people make it out to be.

Favourites are

Yours Is No Disgrace (what a duel with Chris' bass)
Starship Trooper (the very end of Wurm)
and Perpetual Change (just before Bill's drum soslo, the guy is relentless...)

Also like Holdsworth on Devil Take the Hindmost and Metal Fatigue
and Gilmour on Comfortably Numb

I personally am a competent guitar player, and spend a lot of time listening to music such as I just listed and playing along to it, learning different licks etc and using it as inspiration for my own works as many do. And being a guitar player, when I listen to a song or a guitar solo, I actually know what I am listening to in terms of musical structure rather than just saying it sounds mean. And the few people I mentioned here are true masters of the instrument, however there are far too many to mention
 
Honestly I think Hendrix would take all 10 of my top ten. Maybe Gilmore would get a spot but really Hendrix just has too many gems - pretty much every official recording. Here is what I can think of anyway.

Hendrix - Pali Gap
people that don't even like Hendrix can't deny this song's greatness.
Hendrix - Villanova Junction
The Woodstock version he is in some kind of zone on that one imo. I forget which version of the film it is - probably the directors cut - where you can see his hands and fret work. It is insane how fluid he is during the solo with the futuristic Wes Montgomery style.

the Jimi Hendrix Experience - Third Stone From the Sun
This is one of his Sci Fi greats. I love how he paints a picture with the sounds - his voice creates wind sound effects, his guitar makes radar sounds ship sounds and explosions, the drums seem to represent the passing ground from the planes/ships. Anyway in some interview he said that he made the song sound like a Dog Fight between a UFO and the a Jet. If you close your eyes you can kind of figure out whats going on with the chase/fight. He later repeated this type of playing on Star Spangled Banner and Machine Gun.

Pink Floyd (Gilmore) - Echoes
Can I pick this one as a solo?

The Wailers (Peter Tosh) - Stir it Up
I just love that wah tone he gets on this one.

Radiohead (Jonny Greenwood) - Paranoid Android
again just sticks out because I like the tone/effect
