Does LTspice have a "real-time" capability? Can I tweak a potentiometer and see the circuit behavior change?

LTspice is not a real time simulator. You have to change the component values of interest and then re-run. One way to try multiple values is to use the .STEP command, if you provide N values it runs N simulations. See the Useful Commands section of the wiki.

Those of us who are old enough recall that the term "spice deck" refers to the stack of punch cards that one used to encode the spice netlist (or whatever program - Fortran, anyone?) The stack was dumped into the hopper of the punch card reader, then you waited by the computer room window for the operator to take the results of your run off of the line printer and put it in the completed jobs box. LTspice is a nice schematic capture and graphical display on top of that same old "job" based Spice.
