Those days are pretty much gone from here. The next best things are the veggie specific and farmer's markets. Lot's of those around. I also like that they sell mostly by the item rather than the weight.

My wife makes Kotleta with 50% pork 50% beef, which we grind (mince, in english!) and some egg binder. LOTS of parsley. Fried in oil and served with sliced dill cucumbers.

It is not about boiling, it is about fermentation. Boiling destroys enzymes. Simple test: when you can touch it it is hot, but fine. As soon as it hurts it is high enough temperature enough to destroy enzymes. Is it 117 Fahrenheit?
