If you use 4ohms speaker then the lower transformer voltage is advisable.
25-0-25Vac is good.
But I would be very tempted to try 30-0-30Vac for 4ohms. There is enormous Thermal capability in the 3pair output stage.
For 8ohms only (and higher) I use 35-0-35Vac for a +-50Vdc supply. That gives me a 100W amplifier. I don't have any 4ohms speakers and never will have.
