If on spools I do not let them turn, they always sit on a floor/shelf/table and wire unrolls and exits upwards along their axis.
Then all wire ends converge into and exit through a palm sized piece of phenolic board (simply because I always have leftovers around) with lots of tiny holes, think 1-2-3mm as needed to provide a little friction.
