Hmm, at least in some places it was recommended to build for SE OPTs such that the core was somewhat less than halfway to saturation at the quiescent operating point. Might be misusing knee terminology here.

Ive not done anyone actual builds other than winding a couple chokes though.

OPT working at the knee might not sound Hi-Fi, but it might sound High Vividity(TM). In my opinion OPT might play a big role in producing the tube sound. I even go to the extent to guess that (For SE OPT purpose)
1. non-oriented core might be better than grain oriented core;
2. low permeability core might be better than high permeability core;
3. hot rolled lamination might be better than cold rolled lamination

one additional item: a lot of cut-core transformers were used in ferroresonant power supplies and magnetic amplifier units. they may be gapped and are useless for anything except using the core as a part for something else. Its harder to get tight coupling with cut cores compared to a transformer stack of lams. the surfaces have to be matched, with no nicks, and no foreign material, etc. They are better suited to applications where a gap is intentional. So, when you salvage a pair of cut cores, be sure to mark them so they stay matched and together.
