So I'm thinking of putting a Miniblok Tube Amplifier into a chassis from a guitar amplifier, which has three knobs on it: Volume, Tone, and Overdrive. Are there any resistors in this schematic which may be safely replaced with one of the tone or overdrives pots to experiment with the sound? I'm planning to just use it as an audio amplifier, not a dedicated guitar amp. The chassis just fits really well in my workspace.

The resistors feeding the LEDs were chosen for appropriate brightness. All the rest will have been chosen for correct circuit operation as a simple audio amplifier. "Current limiting and safety reasons" would only come into play if you changed them too much, but well before then you would get poorer circuit performance.
