Transformer coupling instead of cap?

If I have a transformer on the last stage of a line level circuit (essentially a pre) can I use a non gapped transformer instead of a cap to block the DC?

...for example in an opamp circuit where there would be around 2-3 VDC on the output pin measured to ground.

Is a gapped core always necessary if there's going to be any amount of DC?

There are many interdependent parameters.
A gapped core isn't essential for DC.
A gapped core might be used because there is a limit to the maximum flux density that a core can take before saturating where the distortion will increase badly that wont sound good and the inductance drops loosing bass.
Using a gapped core means that more turns need to be used for the same magnetizing inductance which increases the winding resistance which reduces the current so reducing the flux density so less of problem with the bass but higher leakage inductance between the windings so the treble suffers.
