Some quick qustions:
What type of tweeters work best with wide (infinite) baffle speakers - ie widest horizontal dispersion?
Also, how do ribbon tweeters compare? This one in particular:

Anyone have experience with said unit in a wide baffle design?

That is question that you answer yourself with an assumption.

Regarding wide dispersion :
The widest dispersion is self evidently from the smallest domes.
Phase guides / shields for the domes can/do improve dispersion,
DIYers tend to not like them, and remove them, FNGR AFAICT.

Ribbon dispersion generally horizontally is comparative
to a dome of the ribbons width, so is usually very good.
Vertically though .... things are a very different matter ....
Which is not always a bad idea ..... though it usually is ....
It is used here IMO to better balance the power response of a
small open baffle midrange, BICBW, might not be a consideration.:

FWIW I have (back in the boxes) a pair of Celestion 3000's,
with 1/2" x 21" ribbons, they are very strange animals ....
