I am trying to find a Linux image file download to put on SD card that will boot this unit (preferably a desktop)

Support for these types of boards and devices varies from vendor to vendor, some are better than others, some are non-existent.
The Jetway board uses a Rockchip 3328 ARM CPU.
Here are some options, have no idea if any of these will work:
- Ubuntu 18.04 from Firefly
- Armbian Downloads. You will have to find a board similar to yours.
- Armbian Forums Rockchip 3288/3328
You could also try downloading a Linux OS from other vendors that also use a Rockchip 3328 CPU on their boards.
Most operating systems for these boards are intended as media players and use an OS like Kodi.
This could be a frustrating experience unless the vendor is committed to software support, this is why the Raspberry Pi is so popular.
