I want to make an S/PDIF buffer (in my CDP, after the DSP: CXD2500AQ, pin 60.), but I really don't know what type of IC will be the best.
I already have a Philips 74HCU04N, a Texas SN74HC04N and a Fairchild 74VHC04 (smd)...
Please advice!

Try uA9638 or faster SN75ALS191 with SPDIF transformer (DA-101C, PE-65612 or so) and R divider (about 390 / 91) - 91 paralel to primary Winding + 390 serial and this net between pos. and neg. outputs of buffer, and 75 paralel to secondary Winding.
