Where do I find parts such as toroidal transformers, power supply caps, heatsinks, and transistors in Canada? (U.S. would also be fine)
I've looked through Digi-keys catalogue and The Parts Connection but found very little. Does anyone have any suggestions?

Plitron is a good source for inexpensive toriodal transformers and they are in located in Ontario.

You might consider Hosfelt Electronics also. You should be able to ask them for a catalogue, which contains way more than their Web-site. http://www.hosfelt.com
I buy IR mosfets from Digi-Key. They should also have computer grade electrolytics as well. Heatsinks are a problem. You might check out the guy in the trading post section under SOZ parts for sale. He might sell you the heatsinks. Also, WWW.Borbelyaudio.com has heatsinks, mosfets. kits, capacitors etc.
You can use www.mouser.com and www.newark.com for semiconductors (newark has all the big power transistors and mosfets that can be hard to find). I use allied (www.alliedelec.com I think) electronics to purchase power toroids made by hammond, which you can check out at www.hammondtransformers.com.
You can try www.sealelectronics.com for a good choice in heatsinks, large filtering caps, PCB's and everything else you might need to build an amp!
Hope this helps!
