I'm after a few schottky diodes (namely the IXYS DSSK60-02A, dual diode, 200V, 60A, or one with similar specs), but the only online source is mouser, and the prices for shipping are RIDICULOUS ($50US shipping for some diodes ?)!!!
Are there any alternative sources that may suite my needs ?

Well I was able to find 150V, 30A schottky diodes ...
Would that suffice for a bridge rectifier (the transformer will be 30 VAC, and about 4amps).
It seems like it would suffice, but most non-schottky bridge rectifiers are rated at about 600V !!!

That will be OK.
If you can´t find higher voltage diodes try to make a two Greatz bridges, one for each of two transformer outputs.
Don´t use transformer central tap for ground connection but take plus and minus from those two bridges to create centrar ground
