I am looking for ideas on what to build with these tubes.
they are very old, some are as old as the mid 30's
some of the military tubes have 1944 date codes
some of the TV tubes are from the 60's but nothing newer.

also have an unknown dual rectifier from a heathkit oscope, and an amperite ballast 9-7

There are some interesting tubes among those you listed. If you want to get a little better impression of what you have, you can search tubes at TDSL Tube search
Surely there are some exotic and expensive tubes, but in my experience the electronics around the tubes form the highest costs and complexity of a (pre) amplifier. Therefore it is best if you can define what you want to build, how much experience you have with electronics, and how much you are willing to spend.

I am currently building "Octal" 8 pin tube projects, mainly old design guitar amps that have the exact sound of this era. As soon as I saw your "6SL7" I started to drool. Keep these!!!!!!! They make super high gain pre-amp sections and are great for phono inputs and guitar. Do you have acess to a good tube tester that tests gain?

I see right off something similar to what I'm building, a parallel 12B4 single ended, driven by a 12AU7....I see you have a 12AY7, rather a bit hot at Av of 44 compared to the AU7 at 17-20. With seven 12B4As' ( "A" designation is 'controlled, slow heater warm-up version) you could do a triple parallel output ??

I have not gotten a chance to download and read every data sheet I can find for these tubes, as I mentioned they are very old and the tubes changed characteristics over the years, the same tube might have 6 different datasheets by 6 different manufactures
only a couple of those tubes have the getter partly worn away, but seeing as some of those are 70 years old, i guess that's really not surprising, some have no getter sprayed on the glass but others with the same part number do, not sure what to make of that.
I also have 5x 12AU7's inside some simpson312 VTVMs they also have an EAA91 double diode which is the same as 6AL5
i should also mention i don't have any output transformers unless i want to scrap a tube filled reel to reel tape player (which is in great condition)
I have no shortage of fine wire and transformer cores however.
as far as experience goes, i tend to stick with stuff like this

I have some old tube books but i really don't know what the capabilities are of the tubes i have, nor how to use them in sensible ways.

direct driven electrostatic speakers?
oh, i have a 4-65A as well. which is just asking to be used in an RF amp, but i have never really been interested in RF gear and getting my license.
I suppose I'm sitting without excuse for not building a doomsday emp proof radio transceiver. can't be that hard for am modulation, but I never did really understand how they did FM discrimination with tubes.

Foster/Seeley discriminators and ratio detectors work just fine using the diodes in a 6AL5.

Truly elegant is the 6BN6 gated beam tube. It's possible to obtain gain, AM limiting, and FM detection from a single bottle; all at the same time. 😀
