So if I have a multi section tube and I am using only one section of that multi section tube, should the unused elements be grounded or left floating?

i would ground the grid and the plateconnection thrue a resistor although high voltage "next door" can cause problems and should be taken into consideration.
I don't think it really matters. If you ever plan to use the unused sections, you should occasionally draw some plate current to avoid cathode interface problems. If not, forget about it.
Sometimes 'floating' electrodes in the same envelope can acquire voltages and disturb the operation of the active section. I would ground the unused parts, or connect them to the cathode of the active section, whichever is more convenient. This assumes that you don't intend to ever use the spare section.
