I'm attempting to get supplies together to make turret boards for the project I'm working on. I got a sheet of 2.5mm Garolite and some turrets, but I realized after I ordered that the turrets look different than the ones I've seen demonstrated in instructional videos, etc. They look like they're not meant to be roll crimped, so I'm not sure how to use them, or even if I can use them at all. Is anyone familiar with this type and how to use them?

No. It's all smooth. There is a slight cup in the base, but it has that post sticking out of the middle of it.
Drill the holes with an interference fit for the post diameter, then press into the hole with a tool.
See if they will stay in, if not use some epoxy. Maybe they were intended to be soldered to a pcb.

An alternative to epoxy would be a piece of solid wire wrapped around the post
a couple of times (under the board) and soldered in place, if the hole is snug.

Nice turrets. Can do a double sided board.

This guy has specialized in turret-board bits and bobs. He is very fussy about the plating on his turrets. I have not bought his turrets but others say they are good. I have bought his board-stuff for another project and it is great.
