Seeking advice on EL156 SEUL/EZ150 amplifier

I am in the planning phases of an amplifier I have wanted to build for a very long time. I am brand new to hifi..I have not yet heard a hifi amp with my own ears haha. I have built a few guitar amplifiers but no longer play guitar, and I am in need of a new home for the skills. Many years ago I came across glowing reviews of the Telefunken EL156, and I was captivated. I have had a few people attempt to dissuade me from this tube without success. I have read everything I could find about EL156 builds, yet I have had trouble finding a solid schematic to work from. I know I would like to use a pair of EL156's and the EZ150 rectifier. I thought I would get the power supply and output section down, then audition different driver tubes..so I bought matched pairs of Telefunken E80CF's, EF86's, ECC83's, and CM3's. As I move closer to ordering the transformers, I thought it would be prudent to reach out to this community that has so much more experience than I do, for advice and guidance. I have started trying to model the power supply in Duncan PSU Designer (asked for help here, too).

I requested quotes from Lundahl and ISO for custom power transformers with these specs:

120V Primary
400-0-400V 300mA
6.3V 4A
6.3V 5A
6.3V 3A
40V bias winding

2x
3.5k Primary
4, 8, 16 Ohm Secondary
25w
UL tap

5H 300mA choke

As I finish this post I realize I haven't really asked any direct questions. I guess I am after general advice and experienced eyes on what I am doing. I would hate to make costly mistakes with components of this kind of value. If this thread receives some attention and engagement, I will happily post about progress and (god willing) include pics of the amplifier. Either way I appreciate this community.
