SB Acoustics Cone Material - Tweeter Selection - First 2.5 way

I am looking to utilize some of the SB Acoustics 5" drivers for a little 2.5 way project.
I see the aluminum does produce a bit better bass, the carbon doesn't seem to like a vented cabinet, and the poly has significantly higher 2nd order distortion (according to hifi compass)

Subjectively, what tone difference have you experienced with the different SB cone materials?

I need to pick a tweeter. I am thinking this SEAS driver or a this VIFA. Thoughts on either of these? XO is around 2k

I have never made a 2.5 so if this is totally wrong then let me know. The idea is wide dispersion pattern and a small footprint. Its for a kitchen. I was going to make a 3 way but it ended up getting super complicated and I've already made a bunch of 3 ways so I thought this might be fun.

Getting the power response right a 2 way seems difficult. There always seems to be a big dip in power around the XO no matter what I do.
