I have five 2' x 4 ' x 2" absorption panels and I am going to build some 1.5' x 1.5' x 8" wood diffusion panels.
Where do I place these? I was thinking 2 panels on each side wall at the first reflections point, 1 panel on the first reflection point on the ceiling, and X number of diffusion panels on the rear wall at the first reflection point.
I have already built the 5 absorption panels, am going to build the diffusors now. How many should I build, and where should I put them?
My room is 11 feet wide by 12 feet long by 8 feet high rectangle. Speakers are at front of room 1.5 feet out from front and side wall. Listening position at back of room 1.5 feet off back wall in the center.

I think you inadvertently suggested one useful place for absorption panels: the rear wall. Except, the rear wall is the wall behind the listening position (at the rear). Unfortunately, your sound is forever screwed up by your sitting against that rear wall....
Also it appears the first reflection point on the right is at the entryway, and on the left there is a dresser in the way(?), so fix these geometry problems first, before playing with 2 inch thick panels.

I am not right against the wall, I can put something behind me. How far forward would be ideal to move the LP?
If the first reflection is at the door area, isn't that a good thing, as it won't reflect directly to the LP?
I can't really change the room layout, any suggestions for where to place stuff with this layout?

Prioritize by first getting things (speakers, you, walls, furniture) perfectly symmetrical left-to-right. Then work on delaying and attenuating reflected sound by moving the speakers and listening position away from walls. Experiment with speaker toe-in, even extreme toe-in to get a sense of what happens to the image center and image depth in that room.
I don't suppose you can use a desk that straddles the foot of the bed, as that would move your LP away from the rear wall? Anyway, the desk is also adding a large reflective surface right at the LP...

it is as symmetrical as possible. my picture isn't exactly to scale, i drew it with a mouse in paint. I have two monitors, keyboard, amplifiers, printer etc. on my desk so it's not quite a reflective surface. I could actually move my desk about 1 foot closer to the bed so it's right up to it, and have my walkway behind my desk, I suppose that would be better?

As long as there's a large void on the right (entryway) and a medium protrusion on the left (dresser), it is not symmetrical for the first reflections. But you will be able to compensate for this to some degree by playing with speaker position, toe-in, and listening position.
If those basic geometry (ray bounce) solutions are not practical, then you might play with absorbers or diffusors at the first reflection points which need it. Hanging them by cables from hooks in the ceiling at the edge of the wall might be a more flexible way to quickly try different combinations...
