I'm wanting to substitute a pair of tweeters with the Seas 27TDFC but the baffle cutout is much larger.
I wondered if you can remove and replace the faceplate on the seas? Thinking of machining a large one for the cutout...

The Seas dome/VC assemlies are generally glued to the faceplates.
Open one up and look.
If it looks possible give it a try, replacements are available if you botch it($22 over here).
If not, switch to a Scanspeak(check first, but most are separate assemblies)

Unfortunately, the Seas 27TDFC faceplate, voice coil, diaphragm and terminals are integrated as one piece. Here's a photo:
