Power Transformer

After completing a suitable pair of speakers(fe167e) I am ready to
build my first tube amp. I have 3 designs

1) ZEN triode
2) RH84SE (AS SEEN HERE )
3) SIMPLE PCL82 DESIGN

Some thing I am not certain about is the power transformer , IN particular the exceptable deviation if any from the qouted B + .
Some desiegns present values for xformers not readily aval.
I would asume over voltage is preferable but what are some ways
to decrease vltage, also how to determine the correct current rating,can you just look at the choke and make it larger or do you add up the quiscent current values for all tubes and increase from there?

I know if you know the output power and load you can calculate the current on the primary of the OPT since you know the Z , but this seems low.
