Well thats a pretty broad question and would definantely depend on what kind of amplifiers you will be working on.

If you are going to specialize in 1 particular brand easy answer, but if you plan on servicing every type in the book than thats a large list and you better be ready to spend some bucks!!!
 
This may have been the list. It needs to be updated a bit but should be of some help.

Commonly Used Parts

Generic (applies to MANY amps):

* For amps that use SMD resistors, keep a good selection of sub 1000 ohm 0805 resistors and sub 500 ohm 1206 resistors.

* For most all of the amps below, the IRF3205 is a good sub for PS FETs rated greater than 50 amps. The IRFZ44 is a good sub for PS FETs rated for 50 amps or less.

* For amps greater than 10 years old, you may want to replace all of the electrolytic capacitors. These will vary too greatly to include suggestions for replacements here.

* PS driver ICs TL594 and SG3525 will cover most amps. SG3524 and SG3526 are also common but are rarely needed.

* For generic amplifiers, the power supply gate resistors often open or change value. Stock both 1/4 watt and 1/8w of 10, 27, 33, 47, 68 and 100 ohm resistors.

well, small list. been trying to track what i keep in and use., but no where near a real list....

resistors: 22ohm, 27ohm, 33ohm, 47ohm, 100ohm 1/4watt. for power fets, and some outputs. i think 1k is popular size.

irfz44n, irf3205, irf640, irf9640, irf540, irf9640, irfp064n, 12p20, 19n20, sg3525an, tL494, (lots of tip102 and tip107 if you are doing old school soundstream reference s/sx) tip35c& tip36c, tL074c, irfz48v, 31n20d.
these are just a quick list of what i use, and you may need different, so take this at your own risk. there are also a few drivers i left out, and couldn't recall.
