My problem is that I do not know what signals to input and what output to expect if the circuits are actually working.
Any advice would be greatly appreciated.

The easiest is pulses of sine waves, try 10 khz, of different level ( This will show the attack, how fast the sine reaches full level, amount of compression, the difference between the in and out signal, and using different levels should show you the threshold.Decay is another thing, you need a sine that drops in level 10db. I would also test this at low signal levels, they are the hardest to get a proper RMS value to control the gain circuit.
