But I actually wanted to build something for my grand-nephew. He's just gotten into music and a device as described would allow him to easily pick up melodies.

Make a search looking for "vocal remover schematics" or "vocal eliminator" and you will find many circuits and ideas.
I have no experience to tell you what works and what no.
Other possibility is checking the reviews of commercial units which work OK and then look for their service manuals or schematics.
