I've been looking for temperature/data logger but have not found one with right features yet.
I want to measure temperature in at least 3 channels at the same time and would need to record voltages (and perhaps GPIO's) at the same time.
Have you come across with any logger that can do that? Should cost max $200-300.
Any help appreciated!

You are pretty slight on specs: What sample rate do you need? What resolution/accuracy do you need? How many voltage inputs do you need? What are the voltage ranges? Does it need to be true simultaneous or can it measure scanned?

As temperatures don't change that quickly 1 sample/s is enough. Thermocouple inputs.
Min 2 voltage inputs: 0-5V would be good, but I could pre-scale outside.

I have found several in the $500-600 range but none in your price range.
The closest I found is this:
DI-245 Thermocouple and Voltage Data Acquisition System
Which has four channels which can be either voltage or thermocouple, that leaves you one channel short.

I got one these recently and it works great: Products - ZOOMBOX - Temperature and data loggers
ZB-01-A has 8xTC, 4xADC, 4xdigital, 2XRTD, 4Xdigital temp inputs and it's only $289.
You can find demo video in youtube, but it was easy to install and logs all inputs at the same time.

I got one of these off eBay and it works great. https://www.lascarelectronics.com/media/1513/easylog-data-logger-el-usb-tc-lcd.pdf All self contained and you read it back with a PC. They tend to be around $80 or less on eBay. You can use several for recording different inputs.
