Unfortunately the term Latin Jazz is a bit vague for me an albums I like is:

I also have Getz/Gilberto and Jazz Samba..but they are better for background music IMO..i.e. too boring.
I haven't heard it but I understand that this Tango album is quite excellent.

Any recording by Baden Powell (Brazilian guitarist) or Rosinha de Valenca (one of his students).
The other Bossa Nova stuff already mentioned (Jobim, Getz, Gilberto etc.) is also great.
You could also try "Azymuth", a brazilian band that plays somekind of jazz/funk influenced Bossa Nova

Although I have Havana Cafe by Paquito...which I don't really like...I dunno what it is...maybe the recording...something bugs me about that album.
The Bossa Nova by Getz/Gilberto et al is a little too much on the safe side for me, and find it not rich enough to listen too often.

Check the Glucklich series from Compost Records. "A collection of rare german fusion grooves with a brazillian flavour" (sic). They all feature a VW. The newer the model, the newer the recordings. My favourite is the Glucklich III wich is mostly Jazzanova and friends.
