Because the signal from a guitar pickup is very small as well as very high impedance, the poweramp cannot handle this directly, and the input is too low impedance.

The opamps act as gain stages that brings the signal up to a level the poweramp can handle + it provides the guitar pickup with the proper high impedance input so that the pickup doesent get loaded down excessively.

The opamp gain stages also allows the use of baxandall tone stacks and other effects to alter the sound of the guitar, such as distortion, boost and other effects.
