Hardwire RCA cable for turntable

I am replacing the RCA hardwire cable for a turntable restoration. The cable is connected to the turntable via the pictured harness. The middle black wire is ground wire that connects to the receiver/pre-amp, the outer wires are right and left signal and ground. The second image is the Mogami 2549 cable I am using. So I do this correctly, do I trim the shield on both ends of the Mogami and connect one wire for signal, the other for ground, for both R/L connections on the RCA connector and the turntable harness? I will connect a 5th wire for the component ground (middle black wire on harness)

I'd start by trying white and blue for signal and return, per channel, and the shields (in parallel) as the 5th (ground) wire. Run the cables as parallel as you can, use heatshrink to help with alignment.
 
Rega connects the common ground to the left channel ground, and most phono pres support that. so if you want to do away with the separate ground wire, that is an option. it is just Left and Right RCA outputs then.

This is a valid option, yes. In my experience, I'd suggest the versatility of running all signal and grounds as a separate conductor, and not tying it to anything.



by "shields in parallel" are you saying to combine the two shields from each cable into one?

Yes.
