For instrumentation applications -- thermcouple, ultrasound, photodiode, strain bridge -- you really want an instrumentation amplifier from Analog Devices, Linear Tech or Burr Brown (TI), Rather than putting the cart in front of the horse, search by application.

Some of the Burr Brown instrumentation amps show up in good quantity on EBay -- like the INA101, INA103 -- these are pretty expensive if you purchase through a distributor, however.
