Could someone take the time to explain to a newbie how the diode/resistor clipping circuit works? I have also seen some circuits where capiactors are part of the circuit. What effect will the capiactors have on the circuit?

I think you need to post a specific circuit to discuss.
The diodes clamp maximum voltage, resulting in clipping. This can be softened by connecting resistors in series with the diodes.
Capacitors will, depending on connection and value, boost or cut bass or treble.
