I'm new to diy tube amps and have completed 300b monoblocks with very good success. I have noticed some tubes on the net that have grid caps on the top of the tube, what kind of tubes are these generally and are any of them good for SE amps?

Those with grid caps on top are generally RF pentodes or electrometer valves. Neither are particularly useful for audio, although I'm sure someone will have used them.

You may have seen valves with anode connectors on top. These were usually intended either for radio transmitters or TV line output. People have used them successfully, but there are obvious safety issues.
