This speaker plate amp is currently only wired for 120vac operation, I have no instructions on what the primary wires are (on RHS, blue, orange, red and black).
MCM Audio Select, 50-6263 200 Watt Subwoofer Amplifier Module.

There appear to be two primary windings Brn & Blue plus Or & Red.
Without seeing the actual wiring, it is difficult to state exactly what to do but a qualified electronics engineer will be able to sort out the tappings.
There is a clue on the IEC label; AC 230volts!

No labels on it unfortunately (unless it's on the base of the transformer - I'd need to remove it to find out). I could maybe use an ohmmeter - measure resistance on the two wires to each primary (should be low), but then how would I know the polarity (so I correctly tie 2 and 3 together).
Perhaps I just need to strip it out?

A low voltage search is best after your best guess. I use a 12 voltage ac transformer in UK 24 ac is better.
Just disconnect from amp and hookup the low voltage to power side. At this point it is 10 to 1 from should be or just a hum

The two primary windings are now wired in parallel for 120V. If you cut the heat shrink tubing off the IEC power connector you should be able to see which pairs are wired together now and of the same polarity. Then you will have the info to proceed as in your post 3 above.
with two paralleled 120v primaries, it is easy to ceonnect them in series for 240 volts, just get the phasing right...
In the end I couldn’t easily do the conversion as the manufacturer had painted all of the connections (speaker side) with lacquer and I would have damaged the unit trying to release them. Very frustrating.
However I have a very good recommendation for mains transformer - Block AIM transformers. Completely silent in use. Can be found cheap off eBay. Don’t bother with any of the other Chinese rubbish of Amazon.
So no need to be put off running imported equipment anymore.
