I want to find a car stereo and wire it up to a power supply and speakers and use it in my garage. I've been reading several tutorials, watching videos, and some guys use an old PSU, some use a power inverter...can someone point me to a safe reliable power supply I can use?

An old computer power supply is likely the easiest. The oldest ones has a mechanical switch for on/off. The later models required that you jump green to black in the power connector. You may be able to get one for simply asking at any shop that repairs/upgrades computers.
