For the Bride of Son of Zen PSU below, if I have a dual 25Vac secondary trafo (~35.25Vdc per) and use 3 x 9.1v Zener plus one 6.8v Zener for the zener string (one leg, say +), will I be getting ~ 30 to 34Vdc out or close to it?
I am targeting around 30Vdc +/- 2Vdc.

In the same token, what is the advantage of using a string, than say a single 30V zener diode for example?
A series Zener string can work better in some ways than a single, higher voltage Zener.
This all depends on the device operating current, regulation, and the dynamic impedance needed.
If a Zener diode is starved (operated with minimal current), its performance will degrade substantially.

Depends on the Zener power rating. A higher operating current does not necessarily improve
the performance, if the chosen Zener power rating is higher as well.
