I've got plenty of 20 gauge, 600 volt, 200 degree centigrade wire, PTFE coating.
Is this adequate for all connections in the AmpCamp amp, or do I need some 16 gauge also?

You can always double up on the wire by twisting more than one strand together. I often do this instead of buying larger wire if i only need a little for power wiring or speaker outputs. Good luck , and have fun!

Not making a comment on what I think you should do, as sometimes a bit of overhead is good, but this should let you know if it's safe.

Is that peak or average current?
Is that total Flow and Return length of cable?

16gauge (16awg) means 1.31mm² or 16swg means 1.626mm²
You can use many strands of thinner wire to match the thicker solid core wire, it you need to match the "resistance".
Cable resistance is not usually the deciding factor in choosing the wire size.

It's both. 2% of peak if that's what you are starting with. 2% of average if that's what you are working with.Destoyer OS,

From the wire sizes, it would be AWG (American Wire Gauge).Is that "wire gauge" standard, or American, or other?
Or 'Gage', I have seen it both ways.
